good friend in St. Tropez, Annette Hippert, infuses rosť wine with bitter
and sweet oranges to make her version of vin d'orange. Sip it cold on
a warm summer evening and let this bitter orange aperitif do its magic.
You must use bitter oranges (like Seville) for this recipe to succeed. Seville oranges are not available in California to my knowledge. We use dried bitter orange peel that we buy at the pharmacy in St. Tropez.
4 liters good quality rosť wine
5 whole bitter oranges (like Seville), each pierced in 60 places with a knitting needle
3 sweet oranges, each pierced in 60 places with a knitting needle
1 cinnamon stick
1/2 liter of unflavored 45% alcohol*
750 g. white sugar
* I use vodka @ 40% alcohol and add a bit more than a 1/2 liter or Everclear @ 75.5% alcohol and use about 1/3 liter.
