Pea Soup

Serves 6 - 8

Often the simplest dishes are the tastiest. This recipe is certainly in that category. It's bright and light flavor (and easy cooking) should make it a standard in your kitchen and a favorite among family and friends. The soup is even better the next day!


20 oz. frozen peas
1 small onion (chopped) or 1 clove of garlic or a few green onions
Juice of 1 lemon
Small handful of mint leaves
2 - 14.5 oz cans of chicken broth
2 cups water
Salt and pepper to taste
Yogurt (optional)
