Bourbon
Balls
Makes about 2 dozen
balls (depending on the size)
Elinor made these Bourbon
Balls around Christmas time. But there's no reason not to enjoy
them year round. The recipe requires no cooking and a batch of
these little bonbons can be made in minutes. Elinor's recipe
probably dates back to the early 1950's and it's still a classic!
Ingredients:
3 cups vanilla-wafers
1 cup pecans
2 TBS light corn syrup
1/2 cup bourbon (or rum)
1 tsp vanilla extract
1 cup confectioner's sugar
Preparation:
- Grind the vanilla
wafers in a food processor until they become a fine
powder.
- Chop the pecans in a
food processor (not too fine; not too coarse).
- In a small bowl or
measuring cup, mix together the bourbon, vanilla extract
and corn syrup.
- In a large bowl, mix
together the vanilla wafer powder and chopped pecans. Add
the bourbon and corn syrup mixture and stir until blended
thoroughly.
- Using a soup spoon,
scoop up a spoonful of the mixture and roll into a ball
between the palms of your hands. If the dough sticks to
your hands, grease your palms with a little butter.
- Set the balls on a
cookie sheet until you've finished forming all of them.
- Put 1/2 cup
confectioners sugar into a plastic or paper bag. Add a
few balls at a time and toss them to coat.
